Shrimp Beignets

Ingredients

  • Creole Tartar Sauce:
  • 2 c. flour
  • 2 heaping Tbs. baking powder
  • 1/2 tsp. ground ginger
  • 1 bunch green onions
  • 1 1/2 c. cooked shrimp
  • 3 Tbs. chopped parsley
  • 3 dashes hot sauce
  • Water, shrimp stock, or beer
  • 1 c. mayo
  • 2 heaping Tbs. Creole mustard
  • 1 hard-boiled egg, chopped
  • 1/2 lemon, squeezed
  • 3 Tbs. chopped parsley
  • 3 Tbs. chopped onion
  • 3 Tbs. chopped dill pickle
  • Tabasco sauce to taste
  • Salt and pepper to taste

Preparation

Step 1

Mix dry ingredients. Add other ingredients except water and hot sauce. Mix well.

Add hot sauce and just enough water to form a loose dough--like thick pancake batter.

Rest 15 minutes.

Fry in 350 degree oil in ping-pong ball size. Drain.

Mix all tartar sauce ingredients together for a dipping sauce.
