Ingredients

  • 8 oz. chopped ham
  • 1 qt. water
  • 1 medium onion - chopped
  • 1/4 tsp. coarse salt
  • 1/2 tsp. pepper
  • 1/2 tsp. pepper sauce
  • (I like sliced onions cooked with the peas but recipe did not call for them)
  • 2 cups hot cooked rice
  • 1/2 cup sliced green onions

Preparation

Step 1

Soak dried black eyed peas overnight. Next morning, drain.
(If using fresh black eyed peas, not necessary to soak overnight)

Boil black eyed peas in enough water to cover them for 2 minutes. Remove from heat; cover and let stand 1 hour; drain and discard water.

In a saucepan, bring ham and 1 quart water to a boil for 15 minutes. Add black-eyed peas, cover, reduce heat to how and simmer, stirring occasionally, 45 minutes. Add onion, salt, pepper and hot sauce and return to a boil. Cover, reduce heat and simmer 15 minutes or until peas are tender. Stir in hot rice and green onions and serve.
