Tomato Head's Tuna Noodle Casserole

Tomato Head is one of Knoxville's favorite restaurants. This is a definite improvement over the mushroom soup/potato chip tuna casserole.

Ingredients
- 1 Tbs. butter
- 1/2 c. chopped onion
- 2 c. mushrooms, sliced
- 1/4 c. flour
- 2 1/2 c. whole milk
- 1 c. cream
- 3 oz. cream cheese
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/4 c. chopped basil
- 3 c. cooked noodles
- 12 oz. tuna, drained
- 1 c. cheese
- 1 c. breadcrumbs
- 3 Tbs. melted butter

Preparation
Step 1
Melt butter; add onion and saute until transparent. Add mushrooms; saute 2-3 minutes. Sprinkle flour over the mushrooms; stir until flour is absorbed.
Add milk and cream; cook until thickened. Reduce heat and add cream cheese and stir until melted. Remove from heat; add basil and salt and pepper. Stir into the mixture of tuna and noodles. Top with cheese and breadcrumb mixture of breadcrumbs and melted butter.
Bake at 350 degrees for around 20 minutes.
