Ingredients

  • 3/4 cup Italian dressing, divided
  • 6 boneless skinless chicken breast halves
  • 2 medium beefsteak tomatoes, chopped
  • 1/4 cup finely chopped red onion
  • 1 tbsp. finely chopped fresh basil

Step 1

-Pour 1/4 cup Italian dressing over chicken in large, shallow glass baking dish or Ziploc plastic bag.

-Cover and marinate in refrigerator, turn occasionally, for at least 30 or up to 3 hrs

-Meanwhile, combine tomatoes, onion, basil and 1/4 dressing in a medium bowl. Cover and marinate in refrigerator at least 30 min.

-Remove chicken from marinade, discard marinade. Grill or broil chicken, turning after 6 min and brushing frequently with remaining 1/4 cup dressing until chicken registers 165 degrees on meat thermometer, about 12 minutes.

-Serve tomato mixture over chicken
