Ingredients
- 2/3 c. chopped walnuts
- 2 1/2 c. all-purpose flour
- 1 c. sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 2 1/2 tsp. grated orange zest, divided
- 2 eggs
- 3/4 c. fresh orange juice
- 1/2 c. walnut or vegetable oil
- 1 1/2 c. peeled, chopped apple
- 2 Tb. sugar
Preparation
Step 1
Preheat oven to 350 degrees. Bake walnuts in a shallow pan, stirring occasionally, 5-10 minutes or until toasted.
Stir together flour, 1 cup sugar, baking powder, baking soda, salt, and 2 tsp. orange zest; make a well in center of mixture.
Stir together eggs, orange juice, and oil until blended. Stir into flour mixture just until moistened; fold in walnuts and apples. Spoon into a greased and floured 5x9: loaf pan.
Stir together remaining 1/2 tsp. orange zest and 2 Tb. sugar; sprinkle over batter.
Bake 55 minutes. Cover with foil, and bake 10 minutes longer or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack 10 minutes. Remove from pan, and cool completely on a wire rack.
