Four-Bean Casserole

Ingredients
- 1/2 lb. bacon, cut up
- 1/2 cup ketchup
- 1 teaspoon salt
- 2 teaspoons prepared mustard
- 4 teaspoons cider vinegar
- 1/3 cup brown sugar
- 1 can (16-oz.) garbonzo beans, drained
- 1 can (16-oz.) dark red kidney beans, drained
- 1 can (16-oz.) lima beans, drained
- 1 can (28-oz.) pork and beans
Preparation
Step 1
In 2-qt. glass casserole, place cut-up bacon. Microwave at High (10)
6 to 7 Minutes, stirring after 3 minutes. Drain. Stir in remaining
ingredients. Cover. Microwave at High (10)15 to 18 Minutes, stirringafter 10 minutes.
Fresh Tomato Garnish: In 1 1/2-qt. casserole Microwave at High (10) for 2 Minutes 1 tablespoon prepared mustard, 1 tablespoon brown sugar, 2 teaspoons white vinegar and 1/2 teaspoon seasoned salt. Add 2 cups tomatoes, 1/2 cup celery, 1/2 cup green pepper and 1/4 cup green onion all finely chopped. Microwave at High for 2 more Minutes. Stir well and refrigerate at least 1 hour before serving.
