Crispy Shrimp Balls

Ingredients

  • 1 Tbp butter
  • 3/4 cup chopped onions
  • 1/4 cup minced celery
  • 1/4 cup chopped green bell peppers
  • 1 1/2 tsp salt
  • 3/4 tsp cayenne
  • 2 pounds medium size shrimp, peeled/deveined and chopped
  • 2 tsp chopped garlic
  • 1/4 cup chopped green onion
  • 2 large brown eggs, 1 beaten
  • 2 cups fine dried bread crumbs
  • 1/2 cup flour
  • 2 tsp creole seasoning
  • 2 Tbp water
  • 1/4 cup vegetable oil

Preparation

Step 1

In a large fry pan melt the butter over medium heat. Add the onions, celery, bell pepper, salt and cayenne. Cook, stirring until soft about 6 minutes. Add the shrimp and cook, stirring for 3 minutes. Transfer this mixture to a large mixing bowl and let it cool slightly. Add the garlic, green onions, 2 eggs and 1 cup of bread crumbs. Stir to mix well. Roll into 2" balls.
Set up 3 small bowls, 1 with beaten eggs, 1 with 1 cup bread crumbs and 1 tsp creole seasoning, last bowl with the flour.
Take each ball and dredge first in the flour, then the egg mixture and last in the bread crumbs turning to coat the entire shrimp ball. Place the breaded balls onto a baking sheet and refrigerate for 1 hour.
Heat the vegetable oil in a large skillet over medium heat. Cook the balls several at a time rolling around to browned, about 6 minutes. Drain on paper towel.
