Ingredients
- 1 lb ground lean beef
- 1 (28 ounce) can crushed tomatoes in puree
- 1 large spanish onion-chopped
- 1 cup shredded carrots
- 1/4 cup packed dark brown sugar
- 1 (1.25 ounce) package reduced sodium taco seasoning
- 1 teaspoon cinnamon
- 1 1/2 cups frozen corn kernels
- 1/4 cup corn chips, crushed for garnish

Step 1
1) spray a large nonstick skillet with nonstick spray and set over medium-high heat. Add the beef and cook, stirring frequently to break it up, until almost cooked through, about 5 minutes.
2) Transfer the beef to a 5-6 quart slow cooker. Add the tomatoes, onions, carrots, brown sugar, taco seasoning and cinnamon; mix well. With the back of the spoon, gently press the beef and vegetables so they form an even layer. Place corn on top, leaving 1/2 inch border around the edge of the slow cooker. Cover and cook until the vegetables are fork tender, 4-5 hours on high or 8-10 hours on low. Garnish the corn chips
