Spritz Cookies

Ingredients

  • 2 cups cake flour
  • 1/4 tsp salt
  • 3/4 cup unsalted butter, at room temperature
  • 1/2 cup granulated sugar
  • 1 egg yolk
  • 1/2 tsp almond extract
  • 1/2 tsp vanilla extract
  • 3 or 4 drops food coloring (optional)

Preparation

Step 1

1. Preheat oven to 350F. Line several cookie sheets with parchment paper.
2. Sift flour into a bowl. Ad in the salt and sift again. It is important to sift the flour twice.
3. In a stand mixer, beat butter on medium speed for several minutes until soft.
4. With the mixer on low speed, add the sugar in a slow stream and beat until light and fluffy.
5. Add in the egg yolk and both extracts and mix until combined.
6. Add in the flour mixture and mix until combined.
7. Add a few drops of food coloring if desired.
8. Load the dough into the cookie press per the manufacturer’s instructions.
9. Press cookies onto the cookie sheets about 1 ½ inches apart. Decorate the cookies with sprinkles, candies, and other decorations. Bake for 8-10 minutes until golden. Cool cookie sheets on a wire rack.
