Southwestern White Chili

Ingredients

  • 3 15.5 oz. cans Great Northern Chili rinsed and drained
  • 4 cups Chicken broth
  • 3 cups cooked, chopped chicken
  • 2 4 oz. cans diced green chile peppers undrained
  • 1 cup chopped onion
  • 4 garlic cloves minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 2 cups Monoray Jack Cheese
  • Sour Cream & cilantro optional

Preparation

Step 1

Combine beans, broth, chicken, undrained chile peppers, onion, garlic, cumin, oregano and cayenne pepper.

Cover and cook on low heat for 8-10 hours or on high heat for 4 to 5 hours.

Optional: Can of corn 1 hour before serving.

I like to reduce the amount of Cumin to 1 to 1.5 teaspoons
Add cheese stir until melted. Top with Sour Cream and cilantro.
