Mandarin Orange Truffles

Ingredients

  • 11 oz can mandarin oranges, drained
  • 6 oz pkg (1 cup) semi-sweet chocolate chips
  • 1/4 cup whipping cream or evaporated milk
  • 3 T butter
  • 12 oz box vanilla wafers, crushed (3 cups)
  • 1/2 cup powdered sugar
  • 1/2 cup ground almonds
  • 2 T orange-flavored liqueur
  • chocolate sprinkles

Preparation

Step 1

In blender or food processor, chop oranges very fine. In heavy saucepan combine oranges, chocolate, cream and butter. Heat over low heat until chocolate melted, stirring constantly. Cook 5 minutes longer, stirring occasionally. Stir in cookie crumbs, almonds, sugar and liqueur. Refrigerate 30 minutes or until mixture is firm enough to handle. Shape into 1 inch balls and roll in chocolate sprinkles
