Ingredients
- 1/2 cup rice vinegar
- 2 T soy sauce
- 1 T sesame oil
- 1 T minced fresh ginger
- 1 T olive oil
- 1 lb coleslaw mix
- 1/2 cup chopped scallions
- 1/4 cup chopped fresh cilantro
- 2 T sesame seeds, toasted
- one 8 oz can of water chestnuts, drained and chopped

Preparation
Step 1
1. In a large bowl, combine rice vinegar, soy sauce, sesame oil, ginger and olive oil. Whisk to blend.
2. Stir in the coleslaw mix and scallions. Toss to coat.
Freezing instructions: Spoon the slaw into a 1 quart freezer bag. Seal and freeze.
To Thaw & Serve: Thaw the slaw in the refrigerator on a tray to catch any drips. Just before serving, stir in the chopped cilantro, sesame seeds and water chestnuts.
