Ingredients

  • ½

    cup rice vinegar

  • 2

    T soy sauce

  • 1

    T sesame oil

  • 1

    T minced fresh ginger

  • 1

    T olive oil

  • 1

    lb coleslaw mix

  • ½

    cup chopped scallions

  • ¼

    cup chopped fresh cilantro

  • 2

    T sesame seeds, toasted

  • one

    8 oz can of water chestnuts, drained and chopped

Directions

1. In a large bowl, combine rice vinegar, soy sauce, sesame oil, ginger and olive oil. Whisk to blend. 2. Stir in the coleslaw mix and scallions. Toss to coat. Freezing instructions: Spoon the slaw into a 1 quart freezer bag. Seal and freeze. To Thaw & Serve: Thaw the slaw in the refrigerator on a tray to catch any drips. Just before serving, stir in the chopped cilantro, sesame seeds and water chestnuts.
