Spicy Scallop and Shrimp Alfredo

Ingredients

  • Serves 4
  • 1 lb large prawns, peeled and deveined
  • 1 lb. large sea scallops
  • 1 cup sliced mushrooms
  • 1 pkg frozen cauliflower florets (thawed)
  • 1 cup fat free half and half
  • 1/3 cup grated parmesan cheese
  • 2-3 large cloves garlic minced
  • 1/2 cup chopped onion
  • 1/2 tsp garlic powder
  • 1/2 tsp cayenne pepper (a bit less if you don't like spicy)
  • 1/2 tsp crushed red pepper flakes
  • 1/2 tsp salt
  • 2-3 TBS butter
  • 1 TBS olive
  • cooked linguine (approx 1/2 pkg)

Preparation

Step 1

1. Mix garlic powder and cayenne and toss with scallops and shrimp. Set aside

2.Place 1 TBS of olive oil and butter in large non stick pan and once melted saute the shrimp over med high heat until pink. Remove and set aside in bowl. Add scallops and sear both sides until scallops are opaque and have a browninsh sear on both sides. Remove to bowl with shrimp

3. In same hot pan add remaining butter, and scrape up any cooked bits from shrimp and scallop. Add onions and mushrooms and saute until tender.

4. Pour in half and half and cook 2 minutes, add garlic and cook an additional 2 minutes.

5. Add crushed red pepper flakes and salt.

6. Add parmesan cheese and reduce heat to medium low.

7. Add back in the shrimp , and scallops along with any juices accumulated in bowl.

8. Add cauliflower and pasta . Toss well and raise heat to medium high just until everything is heated through.
