Simple Pizza Sauce

Ingredients

  • 1 14 oz. whole peeled tomatoes with juice
  • 2 Tbsp. butter
  • 1/2 onion, peeled and left whole
  • 1/2 tsp. salt

Step 1

Place the tomatoes in a large saucepan. Crush the tomatoes in your hands until they reach the desired state of chunkiness (remove any hard stems or stringy stems).
Add butter, onion and salt. Cook, uncovered, over medium heat until sauce just comes to a boil. Reduce heat to simmer and cook until sauce is thick, about 1 hour. Stir occasionally, mashing any large chunks of tomato with the back of a spoon.
Taste and add more salt if necessary. Remove onion before using.

I like to use caramelized onions to top a pizza! Peel and thinly slice one medium onion. In a skillet, sauté slices in 1 Tbsp. olive oil over low heat until very soft and caramel-colored, about 20 - 30 minutes.
