Caramelized Apple Salad with Maytag Blue,Black Walnuts, and Spicy Orange Vinaigrette

Ingredients

  • Salad
  • Spicy Orange Vinaigrette (see below)
  • 2 Granny Smith apples, peeled, cored, and cut
  • into eighths
  • 2 cups watercress
  • 2 cups frisee or another crisp, bitter green
  • Salt and freshly ground pepper
  • 6 oz blue cheese (preferably Maytag),
  • 1/4 cup black walnuts or other walnuts, toasted and coarsely chopped
  • Spicy Orange Vinaigrette
  • 4 cups orange juice
  • 2 Tbs red wine vinegar
  • 2 Tbs coarsely chopped red onion
  • 1 jalapeno pepper, coarsely chopped
  • 2 Tbs ancho chile powder
  • 3/4 cup olive oil
  • 1 Tbs honey
  • Salt and freshly ground pepper to taste

Preparation

Step 1

Heat 3/4 cup of the vinaigrette in a medium skillet over medium-high heat. Add the apples and cook until golden brown on the bottom, then turn over and sauté until just cooked through, 1-2 minutes more.

Place the watercress and frisee in a medium bowl and toss with 'A cup of the vinaigrette. Season with salt and pepper to taste and divide among four plates. Arrange 4 apple pieces on each plate, garnish with walnuts and blue cheese, and drizzle lightly with remaining vinaigrette.

Spicy Orange Vinaigrette

Heat the orange juice in a small nonreactive pan over high heat and boil until reduced to 1/4 cup. Combine the reduced orange juice, vinegar, onion, jalapeno, and ancho powder in a food processor and blend until smooth. With the motor running, slowly add the olive oil until the dressing is creamy and emulsified. Add the honey and salt and pepper to taste.
