  • 3 Eggs
  • 3 tablespoons Granulated Sugar
  • Pinch of Salt
  • 1/2 teaspoonVanilla Extract
  • 2 cups All-Purpose Flour
  • 1 1/2 teaspoons Baking Powder
  • 1 tablespoon Butter
  • Oil, for frying
  • Confectioners’ Sugar, for dusting

I can’t even begin to explain how addicting Cenci Cookies are! When you think of deep frying, you normally use a batter. Well in this case, it’s actually a dough which you roll out nice and thin, cut into strips, and deep fry! Dust them with confectioners’ sugar and you have one of the most delicious treats you can think up! Traditionally, the dough is made with rum, but I don’t find that to be necessary. Add these to your Christmas baking list – you won’t regret it!

In a mixer, beat eggs, sugar and salt until foam begins to form. Add in vanilla.

Sift flour with baking powder; gradually add to batter.

Add butter and mix until combined.

Heat oil to 375 degrees and fry strips for about 2 minutes, or until slightly golden.
