Grilled Chicken Sandwiches

Ingredients

  • 2 medium onions sliced
  • 2 red peppers sliced
  • 2 cloves garlic minced
  • 2 Tbs balsamic
  • 4 slice provolone cheese
  • Marinade
  • 4 Boneless chicken breast halves
  • 2 Tbs olive oil
  • 1 lemon
  • 1/2 tsp Italian seasoning
  • 3 Tbs butter
  • 4 sandwich rolls

Preparation

Step 1

Between 2 pieces of plastic wrap pound chicken to 1/2 inch thick. Place in plastic bag with marinade for 1-2 hours.

3 Tbs each lemon juice, olive oil, and 1/2 tsp dried Italian seasoning. S&p.

Drain chicken, discard marinade. In a large skillet cook onion, peppers covered in a hot oil skillet over med-high heat. 15 minutes. Uncover, add garlic cook until golden. Stir in vinegar, s&p until vinegar evaporates. Set aside.

Grill chicken, top with cheese. Serve on bun with pepper mixture.
