Step 1

Place butter in a medium sauce pan and melt slowly over low heat.
Allow it to simmer, and the milk solids will begin to float and become foamy at the top of the oil. Skim these milk solids off, and remove the butter from the heat. It is now clarified. Pour it through cheese cloth to remove the remaining milk solids.

To make ghee continue cooking until milk solids turn brown and sink to the bottom.
