Baked Shrimp with Tomatoes and Feta

Ingredients

  • 1 1/2 (28oz) cans whole, peeled tomatoes, drained
  • 3 Tbs. olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • salt and pepper
  • 1 1/2 lb. large shrimp, peeled and deveined
  • 2 1/2 Tbs fresh oregano
  • 5 oz. Feta

Preparation

Step 1

Oven 400

Mash tomatoes until chunky
Saute onion in skillet. Add garlic and sauté
season with salt and pepper

Add tomatoes and simmer until most liquid evaporates
Stir in shrimp and oregano and sprinkle feta on top

Bake in oven for 10 minutes
