Roasted garlic

  • 2 heads garlic
  • 3 tablespoons olive oil, divided

Preparation

Step 1

Preheat oven to 375 F; arrange 2 sheets of foil crosswise on
top of each other. Cut off stem ends of garlic to expose the cloves; place in the center of oil sheets. Drizzle each head with oil, then loosely fold foil over them to enclose. Roast in the oven until garlic is soft when
pierced, about 45 minutes; open the packet and cool. To pop cloves out of their skin, squeeze each head into a bowl.
