Had this on boat in Maldives. Made by cook from Malaysia. Really liked it. Had hard time getting exact measurements.

Ingredients

  • 1 onion chopped
  • 2 cloves garlic chopped
  • 4 beets grated
  • 2 tbsp oil
  • 1 Tbsp. curry powder
  • 1 tsp. turmeric
  • salt
  • pepper
  • coconut milk (1 can)

Preparation

Step 1

Sauté onion and garlic in olive oil. Add curry powder, turmeric, salt and pepper. Mix in the beet root and one cup water. Bring to a boil. Simmer for 20 minutes. Add cocnut milk and reheat.
