BLUE PARROT TACOS

Ingredients

  • GARLIC MARINADE:
  • 2 LBS skirt steak
  • 1/2 C garlic marinade
  • 8-12 6" flour tortillas
  • 1 head garlic, unpeeled
  • olive oil
  • 1/4 C lemon juice
  • 2 TBL oregano (fresh)
  • 3/4 C canola oil
  • salt
  • BE SURE TO GET INGREDIENTS FOR BLUE PARROT GUACAMOLE

Preparation

Step 1

GARLIC MARINADE:
Preheat oven to 350
drizzle garlic w/ olive oil
wrap garlic in aluminum foil & roast for
45 min
let cool

peel cloves & mix well in blender w/ all
other ingredients

TAQUITOS:
place steak in plastic refrigerator
storage bag
add marinade & refrig. for 24 hrs.

preheat grill on high
grill steak over high heat, abt 5 min.
per side for med. rare
slice & serve w/ warm tortillas

SERVE WITH BLUE PARROT GUACAMOLE
