Coconut Cream Pie

Ingredients
- 1 Pie shell
- 1 Cup sweetened flaked coconut
- 3 Cups half & half
- 2 Eggs
- 3/4 Cup white sugar
- 1/2 Cup all purpose flour
- 1 Teaspoon vanilla extract
- 1/4 Teaspoon salt
- 1 Cup frozen whipped topping (thawed)

Preparation
Step 1
Preheat oven to 350 degrees
spread coconut on baking sheet and bake, stirring occasionally until golden brown (about 5 minutes)
In a medium sauce pan, combine the following:
half and half
eggs
sugar
flour
salt
Mix this well. Bring to a boil over low heat stirring CONSTANTLY.
Remove pan from heat and stir in the following:
3/4 cup toasted coconut
vanilla extract
Pour filling into the pie shell
Save the rest of the coconut for the top of pie
Bake for about 4 hours (until the filling is firm.
Top with whipped cream and remaining coconut and serve.
