Raspberry Chicken

Ingredients

  • 1 teaspoon oil
  • Cooking Spray
  • 1/2 cup red onion, chopped
  • 1/2 teaspoon thyme
  • 1/2 teaspoon salt
  • 4 boneless chicken breasts, skinned
  • 1/3 cup seedless raspberry preserves
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon pepper

Preparation

Step 1

1. Heat oil in pan with cooking spray over medium-high heat until hot.

2. Add onion and saute for about 5 minutes

3. Combine thyme and salt, sprinkle over chicken


4. Add chicken to skillet; saute for 6 minutes on each side or until done. Remove chicken and keep warm.

5. Reduct heat to medium low. Add pepper, preserves, vinegar and stir until melted.

6. Spoon hot raspberry sauce over chicken and serve.
