  • 1 1/2 lbs frozen hash browns
  • 2 cups shredded Swiss cheese
  • 1 bag fresh spinach
  • Ground and cooked sausage
  • 1/3 chopped onion
  • 6 eggs
  • 2 cups milk
  • 1 cup plain yogurt
  • 1/2 t salt
  • 1/4 pepper
  • 1/16 t cayenne red pepper (optional)
  • 1 cup shredded Monterey jack or cheddar cheese



Step 1

Fry hash browns in a small amount of cooking oil until crispy. Spray bottom of 9"x13" pan with cooking oil and arrange hash browns to cover the bottom of the pan. Spread Swiss cheese over crust then spinach and sprinkle with sausage and chopped onion. Beat eggs, milk, yogurt, salt and pepper in a mixing bowl until blended, pour into pan. Top with Monterey jack or cheddar cheese. Bake at 425oF for 20 minutes. Reduce temperature to 325oF and bake 30 minutes longer until center is no longer runny. Let rest 15 minutes before serving. Serves 8.
