Ingredients

    lb package fresh spinach

  • 6

    slices bacon

  • 1/2

    cup green onions, chopped

  • 1

    lb fresh mushrooms, washed, drained, and halved

  • 4

    Tbls wine vinegar

  • 2

    Tbls lemon juice

  • 2

    tsp sugar

  • 1 1/2

    tsp salt

  • 1/4

    tsp black pepper

  • 1/4

    tsp mustard

Directions

Wash spinach. Drain and dry with paper towels and set aside. In small casserole, microwave bacon on High 6 minutes, until crisp. Remove bacon from dish and set aside. Add green onions to dish and microwave on High 2-3 minutes. In 3 qt dish, put bacon drippings and onions. Add mushrooms. Microwave on High 5 minutes, until partly sauteed. Combine wine vinegar, lemon juice, sugar, salt, black pepper, and mustard. Add crumbled bacon bits. Add this mixture to the mushrooms in the 3 qt dish. Microwave on High 3 minutes. Place spinach in large salad bowl. Pour hot mixture over spinach and mix until wilted. Serve hot. Note: For variety add shredded parmesan cheese and 2 hard-cooked eggs, chopped.
