Double-Cheese Macaroni

Ingredients

  • 1 pkg. (16oz) elbow macaroni
  • 3 C (24oz) 4% cottage cheese
  • 1/2 C butter, cubed
  • 1/2 C all-purpose flour
  • 1 tsp salt
  • 1/2 tsp white pepper
  • 1/4 tsp garlic salt
  • 3 C half-and-half cream
  • 1 C milk
  • 4 C (16oz) shredded cheddar cheese
  • TOPPING
  • 1 C dry bread crumbs
  • 1/4 C butter, melted

Preparation

Step 1

Cook macaroni according to pkg directions
meanwhile, place cottage cheese in food
processor
cover & process until smooth
set aside

In lg. saucepan, melt butter
stir in floour, salt, pepper, garlic
salt until smooth
gradually add cream & milk
bring to boil
cook & stir for 2 min or until thickened

Drain macaroni
transfer to lg. bowl
add cheddar cheese, cottage cheese &
white sauce
toss to coat
transfer to greased 13"x9" baking dish
dish will be full
combine bread crumbs & butter
sprinkle over top

bake uncovered @400 for 20-25 min or
until bubbly
