- 1 tbsp extra-virgin olive oil
- 1 tsp red wine vinegar
- 1 tsp Dijon mustard
- salt and pepper
- 1 cup baby spinach
- 1 ounces diced chicken breasts
- 1 tbsp chopped pecans
- 1 tbsp dried tart cherries

Step 1
Whisk together the olive oil, red wine vinegar and mustard. Add a pinch of salt and pepper.
Arrange spinach, chicken,chopped pecans and cherries on a plate; drizzled with dressing. Serve with a small whole-wheat roll.
