Ingredients
- 6 boneless pork chops (about 1/4" thick)
- 2 small red bell peppers, seeded, deribbed and cut into
- 1/4 -inch thick strips
- 1 medium onion, thinly sliced
- 1 (28-oz.) can whole tomatoes, with juice
- 4 cloves garlic, pressed
- 1/4 teaspoon thyme
- 1/4 teaspoon fennel seeds
- 1/2 teaspoon basil
- 3 strips of orange peeling (just use clean peel from an
- orange, not too much)
- Salt and pepper to taste
Preparation
Step 1
Place all ingredients in slow cooker, blend well. Cover and cook on low heat setting for 7 to 9 hours (or high 3 to 4 hours). Before serving, taste the sauce and correct the seasonings, if necessary.
SERVING SUGGESTION: Steamed red potatoes, baby carrots and broccoli.
