Classic Rice Pudding

  • 1 1/2 cups cooked rice
  • 5 eggs
  • 2/3 cup sugar
  • 2 tsp vanilla
  • 3 1/3 cups milk

Step 1

Preheat oven to 350F.

Spread rice in a thin layer (about 1/4" thick) in a buttered 2 quart baking dish and set aside.

Make a custard by whisking together 5 eggs, sugar, vanilla, and milk in a large bowl until thoroughly combined.

Pour custard over rice, then transfer baking dish to a large roasting pan. Pour enough cold water into baking pan to reach two-thirds of the way up the sides of the roasting dish, then transfer to oven and bake until custard is just set, about 1 hour.

Serve warm or at room temp. Garnish with a little heavy cream.
