Corned Beef

Our family staple on St. Patrick's Day. I purchase a freshly seasoned corned beef from a local butcher. You can use packaged, all ready seasoned corned beef found in local supermarket.

Ingredients

  • 4 lbs Corned Beef
  • 2 C Carrots (diced)
  • 2 C Russet Potatoes (cut into 1/4's)
  • Water to cover meat.

Preparation

Step 1

Using a large soup pot, place corned beef with seasoning. Cover meat with water. Place on stove and bring to a boil. Boil for 1 hour per pound. Add water as needed to insure meat is submerged. Last 45 minutes add vegetables.

To Prepare Vegetables:
Wash and scrub potatoes - DO NOT PEEL - cut into 1/4's. Do this by cutting potato in 1/2 lengthwise, then cut in 1/2 again lengthwise. Wash and scrub carrots and cut into 1/2" rounds.
