Ingredients

    lbs. well-trimmed beef stew meat

  • 1

    large onion, sliced

  • 2

    cloves garlic, minced

  • 1

    tablespoon olive oil

  • 1 1/2

    cups water

  • 1

    cup sliced carrots

  • 1

    cup sliced zucchini

  • 1

    cup diced celery

  • 1

    small green pepper

  • 3

    medium tomatoes, peeled and quartered

  • 1/2

    teaspoon salt

  • 1/2

    teaspoon sugar

  • 1/2

    teaspoon rosemary

  • 1/2

    teaspoon thyme

  • 1/4

    teaspoon pepper

  • 3

    cans onion soup

  • Shell macaroni, orzo, or whatever pasta you prefer

  • Parmesan cheese

Directions

Place the meat, onion and garlic and the oil in a heavy kettle and bake at 400 for 30 minutes, stirring occasionally until meat is browned. Add the water, cover, and reduce the heat to 350, and cook for 1 1/2 hours, adding more water if necessary. Add the vegetables, spices, and soup and bake for 1 1/2 hours or until the meat is tender. To serve, spoon the pasta into bowls and ladle the stew over it. Sprinkle with Parmesan cheese.
