Ingredients
- 2 lbs. well-trimmed beef stew meat
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 1/2 cups water
- 1 cup sliced carrots
- 1 cup sliced zucchini
- 1 cup diced celery
- 1 small green pepper
- 3 medium tomatoes, peeled and quartered
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon rosemary
- 1/2 teaspoon thyme
- 1/4 teaspoon pepper
- 3 cans onion soup
- Shell macaroni, orzo, or whatever pasta you prefer
- Parmesan cheese

Step 1
Place the meat, onion and garlic and the oil in a heavy kettle and bake at 400 for 30 minutes, stirring occasionally until meat is browned. Add the water, cover, and reduce the heat to 350, and cook for 1 1/2 hours, adding more water if necessary. Add the vegetables, spices, and soup and bake for 1 1/2 hours or until the meat is tender. To serve, spoon the pasta into bowls and ladle the stew over it. Sprinkle with Parmesan cheese.
