Pineapple Filling (for cake)

Ingredients

  • 1/2 cup sugar
  • 4 Tbls all-purpose flour
  • 1/8 tsp salt
  • 1 egg
  • 1 large can crushed pineapple
  • 3/4 cup pineapple juice
  • 1 Tbls butter

Preparation

Step 1

Drain pineapple and reserve juice.

In the top of a double boiler over simmering water, combine sugar, flour, and salt. Stir in egg, pineapple and pineapple juice. Cook, stirring frequently, until thickened. Stir in butter. Remove from heat and allow to cool.

Note: You can use fresh pineapple and pineapple juice.
