Ingredients
- 3 pounds small red potatoes, sliced
- 2 large onions, coursely chopped
- 1 bunch fresh parsley, chopped
- salt and pepper, to taste
- 1 pound bacon (apple-wood or maple flavored
- 1 cup olive oil
Preparation
Step 1
Slice the potatoes into 1/8 inch thick slices.
Cut the bacon into strips down the side to get one-inch pieces.
Put enough olive oil in a large deep skillet to cover bottom of pan about 1/4 inch deep.
Add the potatoes to the pan, along with the uncooked bacon, and salt and pepper.
Cook on medium-high heat, stirring to prevent the potatoes from burning and sticking to the bottom of pan. (Scrape the pan with a spatula as they are browning).
Add the onions and parsley half-way through cooking.
Cover the pan for the first 20 minutes, and cook on low. Then turn up the heat for the last 15 minutes to brown some of the potatoes.
Serve hot.
