Meat Sauce with Ricotta 1 Picture

Ingredients

  • 1/2 cup chopped onion
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons butter
  • 3/4 pound ground beef
  • Salt
  • 1/2 cup white wine
  • 2 cups chopped canned peeled tomatoes
  • 1/3 cup grated parmigiano-reggiano cheese
  • 1/3 cup ricotta cheese

Step 1

Toss this sauce with 1 pound cooked pasta.

In a large saucepan, combine onion, olive oil and butter over high heat. Cook until golden, then stir in ground beef and cook for 5 minutes; season with salt. Add white wine and cook for 2 minutes. Stir in tomatoes with their juice, season with salt, bring to a simmer and cook for 1 1/2 hours. Reserve 1/3 of prepared meat sauce for another dish. Stir in ricotta to remaining meat sauce. Add grated cheese when tossing with pasta.
