01/01/17 - I added a full bag of PC Kale Blend which rendered it inedible to Dan so keep that in mind and use just a cup of very finely diced kale (or none at all and do greens on side if you want them)

Ingredients

  • 4 bacon slices
  • 1/4 cup onion diced
  • 2 stalks celery, diced
  • 1/2 sweet red bell pepper diced
  • 2 cups black-eyed peas (1 can, drained and rinsed)
  • 2 cups chicken broth
  • 1/2 cup arborio rice (dry)
  • 1/2 to 1 teaspoon Emeril's Essence
  • 1 cup finely chopped kale leaves
  • 1 cup finely chopped chard leaves
  • salt and pepper to taste

Preparation

Step 1

Dice bacon and brown in your large stainless-steel, copper-bottomed pot with onion and peppers, until bacon is crisp and vegetables are soft, 10 to 15 minutes.

Add rice and essence and stir for a minute or two. Add beans, broth and greens, cover and simmer over very low heat about 30 - 40 minutes, until the rice is tender.

Salt and pepper to taste and serve with a dash of hot sauce, if desired.
