Mexican Rice

Ingredients

  • 1 cup long grain white rice
  • 1 Tbsp oil
  • 1/2 cup fine chopped onion
  • 1/2 cup fine chopped green pepper
  • 1 chopped jalepeno pepper
  • 1 clove garlic, minced
  • 1 seeded tomato, chopped
  • 1 cube chicken bouillion
  • 1 1/2 cup heated chicken broth
  • s & p to taste
  • 1/2 tsp cumin
  • 1/2 cup chopped cilantro (optional)

Preparation

Step 1

Saute rice in oil until rice browned. Add onion, gr. pepper, jalepeno, garlic & tomato. lightly saute.

Add seasonings & broth.

Add cilantro.

Bring to boil. Cover & reduce heat to low. Cook 20 min
