Curried vegetable soup

Ingredients

  • 1 chopped onion
  • 3 cloves chopped garlic
  • 2 tblsp grated ginger
  • Olive oil to sauté
  • 1 chopped red bell
  • 1/2 chopped jalepeno
  • 1/2 head cauliflower, chopped
  • 1 chopped tomato
  • 3 ribs celery, chopped
  • 1/4 chopped cabbage( about 1 cup)
  • 4 chopped carrots
  • 1 small can coconut milk
  • Chicken base
  • 1 small can tomato purée
  • 1/2 tsp chili flakes
  • 2 tsp each turmeric, chili powder, curry powder, cumin, Garam masala
  • Water

Preparation

Step 1

Add a little olive oil in the bottom of a medium saucepan. Heat the onions, garlic, and ginger. When softened add the aromatics. Now add the carrots, bell pepper, and celery. Then the jalepeno. Add the cabbage. Now cover with water and add soup base. Then add the coconut milk, tomato purée and chopped tomato. Adjust seasonings to taste. Cook till just done.
