Grilled Mustard-Glazed Pork Loin

Ingredients
- 1/2 cup grainy mustard
- 6 T apple jelly
- 2 T dark brown sugar
- 2 T olive oil
- 1 large garlic clove minced
- 2 t fresh minced thyme
- 1/2 t salt
- 3/4 t pepper
- 1 boneless pork loin roast (2 1/2 to 3 lbs) fat on top scored (square pattern)

Step 1
Whisk mustard, jelly, sugar, oil, garlic, thyme, salt and pepper in medium bowl. Reserve one third of mustard mixture for serving. Coat the meat completely with half of the remaining mustard mixture. Scrape and oil the cooking grate on your grill.
Grill port directly over coals until well browned all over about 12 to 15 minutes. Place pork fat-side up on cooler side of grill and brush with about one-third of the remaining mustard mixture. Cover, open lid vents completely and cook, brushing with mustard mixture every 10 minutes until meat registers 140 degrees, 25 to 40 minutes.
Move to counter. Tent with foil. Let meat rest. Combine juices with remaining sauce
