Chicken Diane

Ingredients

  • 1-2 tablespoons olive oil, for sautéing
  • 8 chicken breast halves, cut into bite size pieces
  • 1 pound mushroom caps
  • 1/2 cup white wine
  • 1 cup water
  • 2 tablespoons corn starch
  • 1 bunch scallions, diced
  • 1 tablespoon Cajun spice mix
  • Pinch dry basil
  • 1 garlic clove, minced
  • 2 pounds cooked fettucine

Preparation

Step 1

In a large skillet, heat the oil. Brown the chicken on both sides. Discard thecoil, but return the chicken to the skillet.

To the same skillet, add the mushrooms.

In a separate container, mix together the wine and water. Dissolve the cornstarch in this mixture and add to the skillet. Bring to a simmer. Add the scallions, Cajun spices, basil and garlic. Return to a simmer and cook 2-3 minutes, until the scallions are soft.

Toss with the cooked pasta and serve.
