Lemon Crinkle Cookies

  • 1 c. butter, softened
  • 2 c. sugar
  • 1 tsp. vanilla extract
  • 2 eggs
  • 2 tsp. lemon zest
  • 2 Tbsp. fresh lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 2 1/2 - 3 cups flour
  • 1 c. powdered sugar



Step 1

Cream butter and sugar until light and fluffy. Whip in vanilla, egg, lemon zest and juice, scraping sides as needed. Stir in remaining ingredients except for powdered sugar. Make sure dough is well blended. Roll a heaping teaspoon of dough in powdered sugar and place on lightly greased, light colored baking sheet. Bake 350 degrees for 9-11 minutes or until the cookie bottom barely browns and the top is not shiny.
