Ingredients
- 1 cup brown rice
- 1 cup lentils
- 3/4 cup pinto beans
- 1 onion, chopped
- 2 cloves chopped garlic
- 1 tblsp ginger,grated
- 2 eggs
- 1 cup bread crumbs
- 2 tblsp olive oil
- 1 tsp each turmeric, curry powder, cumin, chili powder
- 1 tblsp chicken base
- Salt and pepper to taste

In a rice cooker, place both the rice and lentils and cover with water by 1 inch. Let this cook, both will be done at the same time. Alternately you may choose to cook on stovetop which will take 35 minutes. Meanwhile In a little olive oil sauté your veg. In a large bowl place the eggs and the bread crumbs. Add the spices to the onion mixture to deepen flavor. Crush the pinto beans with potato masher, leaving some texture. Mix them into crumbs, add the onion and garlic. Add the cooked rice and lentils, then the base. Mix well and form patties. It makes 10 large. I baked the patties in a 350* oven for 15 minutes or so, till they made a bit of a crust. You may want to spray them with pam first which will help them crust up. Freezes beautifully. Top with feta and yogurt or tatzhiki.
