Ingredients
- 2 C old fashioned oats
- 1 3/4 C All Purpose Flour
- 1 1/2 t salt
- 3/4 t baking powder
- 1/4 t baking soda
- 1 1/3 C light brown sugar
- 6 T melted butter
- 1 3/4 C milk
- 2 large eggs, lightly beaten
- Topping
- 1/2 C rolled oats
- 1/3 C flour
- 1/3 C toasted pecans
- 1/3 C light brown sugar
- 1 1 1/4 t cinnamon
- Pinch of salt
- 4 T butter
Preparation
Step 1
1. Toast Oats in pan with 2 T Butter til golden. 6-8 mins
2. put in food processor and process 30 secs to get oat flour.
3. Add all purpose Flour, salt, baking powder, baking soda to the processor, and pulse to combine.
Mix Wet ingredients together til smooth
add half of the dry mixture to wet and whisk, fold in the rest of dry ingredients.
Let mixture sit for 20 mins to hydrate
Topping
Mix dry ingredients, then add butter
scoop mix into greased muffin tin. Add about 2 T topping per muffin. Bake in preheated 375 dg oven for 18-25 mins (Rotate halfwy thru). til toothpick comes out clean.
Let sit for 10 mins
