Sausages & Peperonata

Ingredients

  • PEPERONATA:
  • Hot or mild Italian sausage, 3 lbs. cut into serving pieces
  • Peperonata
  • 1 lb. green peppers ( about 3 medium), sliced
  • 1 lb. red peppers (about 3 medium) sliced
  • 1 lb. red onions ( about 3 medium ) sliced
  • 2 large cloves garlic, minced
  • 1/4 cup olive or cooking oil
  • 1 1/2 tsp. dried oregano leaves
  • Salt and Pepper

Preparation

Indirect/medium

Prepare peperonata. Place sausage on cooking grate. Cooking until sausage is no longer pink in the center about 20-30 minutes. Turn sausage several times during cooking to brown on all sides. Serve sausage with Peperonata.


PEPERONATA:

Saute peppers, onions and garlic in oil in large skillet 10 minutes; stir in basil, oregano, salt and pepper. Cook over medium heat until peppers are very soft and mixture is thick, about 30 minutes. Makes 3 cups.
