Citrus Green Beans

Ingredients

  • 1 pound green beans, trimmed
  • 2 teaspoons extra-virgin olive oil
  • 3/4 cup sliced shallots (about 2 large)
  • 1 teaspoon grated orange zest, plus more garnish
  • 1/2 tablespoon fresh lemon juice
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon coarse sea salt

Preparation

Step 1

Cook the green beans in boiling water for 2 minutes. Drain the beans, rinse them under cold running water, and again. Drain well.

Heat a large nonstick skillet over medium-high heat. Add the oil and shallots, sauté 2 minutes or until tender. Stir in the green beans. Add 1 teaspoon orange zest, lemon juice, pepper, and salt. Sauté 2 minutes. Spoon into a serving dish and garnish with more orange zest.
