Ingredients
- 1 cup Quinoa cooked with chicken stock per pkg.
- 2 cups chicken broth
- 1 1/2 lbs. chicken breast tenders
- 3 T. Olive Oil
- 1 small onion, thinly sliced
- 1 red and 1 yellow bell pepper thinly sliced
- 5 cloves garlic
- 20 leaves fresh basil, julienned
- grated parmesan cheese
- salt and pepper to taste
Preparation
Step 1
Cut chicken into 1" pieces. Heat oil in non-stick skillet over high heat and cook chicken for 5 mins. Add onions and peppers and cook 2 mins. Add garlic and cook 1-2 mins. Season with salt and pepper and remove form heat. Add basil and cooked quinoa. Toss until basil wilts. Garnish with parmesan cheese.
