Angelo's Penne Vodka

Ingredients

  • Start with tomato sauce:
  • 1-28 oz. can crused tomatoes
  • 1-28 oz. can tomato sauce
  • 1/4 of onion sliced thin
  • 1/8 cup olive oil
  • 1/4 cup fresh basil
  • 1 tabl. salt
  • 1/2 teas. black pepper
  • 1/2 teas. oregano
  • 2 large cloves of garlic cut
  • 1 teas. chooped fresh or dried parsley

Preparation

Step 1

In a pot, saute onion in oil, then add cans of tomato sauce, then add all other ingredients and stir sauce on and off for about 2 hours.

About 1/2 hour before tomato sauce is done:
In another pot, melt one stick of butter and add 1 quart of heavy cream, watch carefully: as soon as cream reaches a boil, it will begin to rise, TAKE OFF FLAME!!!!!!

Now add this cream mix to your tomato sauce with a cup of Vodka and stir quickly. Add 3/4 cup grated romano cheese (preferably Locatelli) and simmer for 20-30 minutes longer.
