Edie's Cornmeal Muffins

A really good muffin recipe, you can also make this recipe in a square baking dish and cut it in squares. I often make these muffins when I make chili. The leftover ones are good for breakfast the next morning. Best served warm with butter. Yummy.

Ingredients

  • Mix together and allow to stand for 5 minutes
  • 3/4 cup cornmeal
  • 1 1/4 cups milk
  • Sift together
  • 1 cup all purpose flour
  • 1/3 cup granulated sugar
  • 3 tsp baking powder
  • 1 tsp salt
  • Beat with fork
  • 1 egg
  • Stir into cornmeal mixture with
  • 1/4 vegetable oil

Preparation

Step 1

Add liquid ingredients to dry ingredients and stir only until combined. (Batter will be lumpy).
Fill greased 12 muffin cup pan to 2/3 full for each cup. Bake in preheated 400F for 20 to 25 minutes or until golden brown.
