Cumin, Honey, and Mint-Marinated Lamb Chops
The natural sugar in the honey helps the chops caramelize on the grill.
- 1/4 cup chopped fresh mint
- 1 Tbsp. balsamic vinegar
- 2 tsp. ground cumin
- 1 tsp. dry mustard
- 2 tsp. honey
- 1/2 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 8 (4 oz. each) lamb loin chops, about 1 in. thick, trimmed
- Cooking spray
Combine first 7 ingredients in a small bowl, stirring well. Place lamb in a single layer in a shallow dish; rub spice mixtre evenly over both sides of lamb. Cover and refrigerate for 4 hours.
Place lamb on a grill rack coated with cooking spray. Grill 4 minutes on each side or until desired degree of doneness. Serve immediately.
